Pinoy Style Chicken Macaroni Salad Recipe

Hearty, appetising, and loaded with tropical flavours, it’s sure to be a crowd favourite.

Pinoy-style macaroni salad is always present at any Filipino party. This dish is bursting with tropical flavours and it is an all-time favourite of Pinoys. My wife is very fussy about this dish, she is very particular about the flavours, the tanginess and sweetness should be perfect to her taste buds, so after experimenting and trying out so many recipes, I have finally perfected my recipe for her.

COURSE: SIDE DISH

SERVING: 10 TO 12 Portions

INGREDIENTS:

400 gms Macaroni (elbow) Pasta
470 ml Mayonaise
1/3 cup Sugar
250 gms chicken breast
80 gms carrots
200 gms Pineapple chunks
165 gms Cheese
250 ml double cream
200 gms Raisins
1/4 tsp ground pepper
1/2 tbs salt
1 pc white onion

INSTRUCTIONS:

  1. Cook the pasta according to the instruction on the packaging, make sure you won’t over-cooked. Drain well and allow to cool completely.
  2. Cook the chicken with water, bring it to a boil and scoop the scum that floats on the top. Cook for 20 mins or until it cooked through, then drain from water. Allow it to cool before shredding.
  3. Dice carrots, onions, cheese and drained pineapple chunks (set aside the juice).
  4. In a large bowl, mix macaroni with mayonnaise, sugar and double cream then gently stir together.
  5. Then add onion, carrots, raisins, cheese, pineapple and shredded chicken, mix well together.
  6. Season with salt and pepper then have a taste. If you want it tangier (like my wife prefers) put the pineapple juice according to your liking, then mix well.
  7. Refrigerate for at least an hour to chill completely and allow flavours to blend.
