HEALTHY OATMEAL COOKIES

If you have been looking for the ultimate healthy oatmeal cookie recipe, look no further. These thick and goodie-packed low calorie oatmeal cookies are made from wholesome ingredients, yet they taste like a true treat.

I prefer my version of healthy oatmeal cookies fully loaded with raisins and cranberries and with melty dark chocolate chips too. My cookies have the sweet chew of the raisins. I am a chocolate lover so the dark chocolate chips made me addicted to this oatmeal cookies.

YIELD: 24 COOKIES

PREP TIME: 10 MINUTES

COOK TIME: 10 MINUTES

CHILLING TIME: 30 MINUTES

TOTAL TIME: 20 MINUTES

INGREDIENTS:

1 1/4 CUP– QUICK OR INSTANT OATS
1 CUP– FLOUR
1 1/2 TSP– BAKING POWDER
1 1/2 TSP– CINAMON POWDER
1/2 TSP– SALT
1/4 CUP– APPLE SAUCE
4 TBS– BUTTER (MELTED AND COOLED)
1 LRG– EGG
1 TSP– VANILLA EXTRACT
1/3 CUP– DARK CHOCOLATE CHIPS
1/2 CUP– HONEY
1/4 CUP– RAISINS AND CRANBERRIES

INSTRUCTIONS:

  1. In a large bowl mix all dry ingredients.
  2. Pour all the wet ingredients into the flour mixture and mix well until combined. Then fold in the choco chips and raisins. Place the dough in the fridge and chill for 30 minutes.

3. Preheat the oven to 180 degrees Celcius. Line a large baking pan with parchment paper. Take the cookie dough from the fridge. With a spoon, drop the dough into 1 1/2 inch balls on the pan. Leaving 1 inch of space around each. With the spoon, gently flatten each cookie to be 3/4 inch thick.

4. Bake until cookies are golden brown and firm around edges and set on top about 9 to 10 minutes. Place the baking sheets on a wire rack and let the cookies cool for 2 minutes and transfer the cookies to the rack to cool completely.

TIPS:

  • I recommend using quick (instant) oats than old fashioned oats to get softer and chewier cookie texture.
  • Do not swap all of the fat in this recipe for applesauce.
  • The decent amount of butter is the key to healthy oatmeal cookies’ texture.
  • Swap vegan butter or coconut oil for vegan.
  • Use maple syrup to replace honey for vegan.
  • You can use gluten-free oatmeal and flour for my celiac friends or someone who’s in a gluten-free diet.
