Crispy Banana Fritters Recipe

MY OWN VERSION OF CHUNKY AND CRUNCHY BANANA FRITTERS:

In times like this, staying home makes us hungry all the time. So, we have to be very creative in the kitchen. I was craving for “maruya”, a Filipino banana fritter, but I don’t know how to make it. So, I made my version. I made a lovely crispy treat, serve warm and sprinkle with some sugar. This is a great way to use up some ripe bananas. Quick and easy to make dessert or snack (merienda) for the whole family.

PREP: 10 minutes| COOK: 5 minutes

INGREDIENTS:

100 g – Flour (chilled in the fridge at least 15 mins)
2 pcs– Plantain bananas (ripe)
1/2 tsp– Baking Powder
1 pc– Egg
1 tsp– Vanilla extract
150 ml– Milk
50g– cornflour

DIRECTIONS:

  1. In a bowl, put chilled flour and baking powder together. Beat the egg in another bowl and mix half of the milk. Add the egg mixture into the flour. Mix well to a smooth batter. Slowly add the rest of the milk.
  2. Heat some oil in a deep saucepan, it is important not to burn the oil.
  3. Peel and cut the bananas the way you like. I cut the bananas lengthwise and 1 inch horizontally to make it bite sized.
  4. Roll the banana pieces into the cornflour. Dip and coat them in the batter.
  5. Slowly put the banana into the hot oil and fry until golden brown and crispy. Cook them by small batches and drain on kitchen paper. Sprinkle with some caster sugar while they are hot and ENJOY!!!

You can use any kind of bananas you have at home, the riper they are the better. You can serve it with a scoop of ice cream, drizzle with syrups or honey, fruit sauces or anything you like, whatever is available in your cupboard. I like mine just with some sugar as I want to keep it as simple as possible. Bear in mind, these do need to be eaten as soon as they come right out of the pan to enjoy the crisp and light batter.
